This is an interesting topic. I've been vegan for 12 years and at times, it has felt very difficult. For the first three years I had problems with my immune system and digestion. I suppose the reason why I never went back was because I didn't think that my uncomfortable stomach issues were a justifiable reason to cause another beings suffering and death.

I think you are right about not trying to be all or nothing. Many people shy away from a vegetarian or vegan diet because the all or nothing approach seems so intimidating. There is no point in putting people down as long as they are trying their best to make the ethical choice. Nobody is perfect, and the goal shouldn't be perfection! Conscious choices, ethical decision-making, small steps.

Although for those individuals that experience fear, pain, and eventually death it won't mean much how thankful we are for the meal, I do think it is important to feel gratitude.
